Crispy Einkorn Pumpkin Granola

Quick and easy nutrient and energy packed fall granola made with pumpkin

Ingredients
  

  • 4 cups crispy chopped nuts
  • 2 cups whole wheat or all purpose einkorn flour
  • 12 oz shredded or flaked coconut
  • 1/4 c. chia seeds quick soaked
  • 1/4 c. crispy sunflower/pumpkin seed mix
  • 1/2 c. melted coconut oil
  • 2 t. cinnamon
  • 1/2 t. salt
  • 1 1/2 c. pumpkin
  • 1/2 to 3/4 c. coconut sugar or raw honey

Instructions
 

  • Mix well, spread on large baking sheet and bake at 300 degrees for 30-40 minutes, stirring half way through. Store in airtight container.
