MY NO BAKE ALMOND BUTTER ENERGY BARS ARE PACKED WITH WHOLESOME INGREDIENTS. ALMOND BUTTER, HONEY, CHIA SEEDS, OATS, COCONUT, FLAX, AND COCONUT OIL.

This quick-to-make snack is popular with our family and satisfies for many hours. I came up with this recipe because my nine-year-old daughter was asking to bake something one day this past winter. So I looked online for something easy for her to make.

I needed to be something we could make with ingredients on hand and something easy she could make on her own. She loves to make no-bake cookies so I looked for something similar.

And after looking at dozens of recipes I decided to pull the best ideas from several and this is the recipe I came up with. These easy no-bake almond butter energy bars were a hit. Our family loves almond flavored baked goods.

We like to make this recipe (and several more I’ve put together since then) for afternoon snacks when we need some energy. They also work great for ski days and on the go adventures. And with so many great whole ingredients you just can’t go wrong with this recipe.

No bake almond butter energy bar ingredients

Packed with a powerhouse of ingredients, this energy bar will keep you going for quite a while. And by making this recipe with your own quality ingredients you can skip the bad stuff in commercial energy bars, and also skip the high-cost of buying ‘healthy’ energy bars.

I had all the ingredients in this recipe on hand. And they all came from my favorite all natural and organic bulk foods company, Azure Standard. They have a wide selection of all-natural and organic products. I get almost all my dry ingredients from them. We are normally a chocolate family, but I recently had the chance to try the Uncommon Naturally Sweetened Carob Chips. It came in a box of samples from Azure Standard. Since one of our sons is dairy free and cannot eat regular chocolate I thought this would be a good way to try an alternative for him.

Our family was pleasantly surprised with how great it tasted. Definitely not the carob I remember from my youth! They also sent
Cool Mint Carob Chips and Pure Unsweetened Carob Chips. We haven’t tried those yet, but are thinking up recipes to do so.

So here is the list of goodies included in the energy bar.

  • all natural almond butter
  • melted coconut oil
  • cinnamon
  • raw honey
  • toasted almonds
  • naturally sweetened carob chips
  • shredded coconut
  • almond extract
  • chia seeds

No bake almond butter energy bar instructions

  • no bake almond butter energy bars honey coconut oil cinnamon

  1. Add almond butter, melted coconut oil, raw honey, almond extract and cinnamon to saucepan.
  2. Over low heat, stir mixture until well incorporated and sort of runny.
  3. Stir in flax meal and chia seeds
  4. Take off the burner and stir in oats, coconut, and chopped crispy almonds. For instructions on the why and how of making Crispy nuts see my post on Soaking Raw Nuts and Seeds
  5. Press dough into bread pan prepared with parchment paper
  6. Sprinkle a bit of the reserved toasted almonds on top, pressing them into the top of the dough
  7. Melt carob chips in a small dish in oven or microwave
  8. Drizzle chocolate over energy bars.
  9. Place the pan of granola bars into the fridge for 1/2 hours or more to firm up
  10. Once firm, lift out of the pan with parchment paper and cut into 8 slices.

No Bake Almond Butter Energy Bars

Ingredients
  

  • 1/2 cup all natural creamy almond butter
  • 1-2 Tblsp coconut oil
  • 3 Tblsp raw honey
  • 1/4 – 1/2 tsp pure almond extract or pure vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 cup old fashioned rolled oats
  • 1/3 cup fresh flax meal ground in dry blender
  • 1 Tblsp chia seeds
  • 1/4 cup shredded coconut
  • 1/3 cup toasted crispy almonds chopped or sliced

Topping

  • 2 Tblsp toasted crispy almonds chopped or sliced
  • 1 1/2 Tblsp Uncommon brand lightly sweetened carob chips

Instructions
 

  • Add almond butter, melted coconut oil, raw honey, almond extract and cinnamon to saucepan.
  • Over low heat, stir mixture until well incorporated and sort of runny.

    I made this with my daughter. In step 4 you mention coconut. Is that in the recipe?

      Oh yes!! So sorry I missed that in my printable recipe. I’ve corrected it now online. It is 1/4 cup shredded coconut. You can see how it fits in in the video as well as the steps in the instructions. Again, my apologies on that. Hope it works out for you!
