With a family full of hard working little (and big) farmers I have to work hard to keep hearty, stick-to-your-ribs breakfast choices readily available. No box cereals can keep our crew running until lunch time. Nor do they satisfy like this crispy einkorn pumpkin granola served over home made yogurt.
We don’t commonly keep box cereals in our home because most are packed with refined sugars and preservatives. And, as much as we love to sit down together to farm fresh eggs and bacon, we don’t always have time to cook up a big breakfast before the work starts.
Even in the fall and winter we can be out on the farm pretty early or have days when we have to be off the farm early. Depending on the day and the work to be done, that might mean breakfast needs to be ready at hand without much prep. Even better if it is self-serve!
On those cool mornings this crispy einkorn pumpkin granola hits the spot…especially served over fresh made yogurt! This granola is packed with powerful nutrients and energy foods. Enough to keep even the hardest workers fueled up and satisfied until the lunch bell rings. And, it is quick to throw together and bake up ahead of time.
Start with Energy Rich Ingredients
Crispy Nuts – I make and keep ‘crispy nuts’ on hand for all our baking and snacking needs. Crispy nuts are simply nuts that I have soaked in salt water for at least 8 hours and then dried on low heat in the oven. This is an essential step in making nuts easier to digest. Einkorn Flour – Einkorn is the oldest wheat known to man. Because einkorn has never been hybridized, it is very different in character than modern wheat. It has more nutrients, vitamins and minerals and 30% more protein. And it is 15% lower in starch and has abundant B vitamins and trace minerals like iron.
People with gluten sensitivity often tolerate einkorn wheat and it is a great choice for those wanting to lower their intake of gluten.
Pumpkin or Squash – loaded with vitamin A and being a ‘winter’ food this is the perfect time of year to sneak some pumpkin into anything I make. Not everyone in my family loves cooked pumpkin, but in the granola it is mild enough that everyone eats it just fine.
Chia, Sunflower and Pumpkin Seeds – Smaller seeds are packed full of energy producing nutrients and are easily digested once you have soaked them. Sunflower and pumpkin seeds soak up similar to crispy nuts. Soak delicate chia seeds just before adding to the granola.
Coconut flakes, Coconut Oil and Coconut sugar – Coconut is a very underrated super food with so many good variations. Coconut flakes and coconut oil are well known for their many benefits, but did you know coconut sugar is a great sugar alternative? It is lower on the glycemic index than white sugar, helps lower cholesterol and helps improve insulin sensitivity.
11 great tips for Crispy Einkorn Pumpkin Granola
While this is a wonderful breakfast cereal, with or without yogurt, its uses certainly don’t stop with simply pouring milk on it.
- Serve it over baked squash with butter as a side dish
- Top muffins or oatmeal for a bit of crunch.
- Scoop a spoonful on ice cream
- Bake into cookie dough for added texture
- Use it as a quick topping for apple crisp
- Make pumpkin granola bars
- Sprinkle on a spinach salad with craisins and an EVOO/honey dressing
- Mix it with dried fruit for a hearty travel snack
- Serve with a chopped banana and a dollop of fresh whipped cream
- Switch out the pumpkin for applesauce to give it a new flavor
- Substitute different nuts and seeds or even dried cranberries for nuts and seeds in recipe
Crispy Einkorn Pumpkin Granola Recipe
In large bowl combine the following:
4 cups crispy chopped nuts
2 cups whole wheat or all purpose einkorn flour
12 oz shredded or flaked coconut
1/4 c. chia seeds, quick soaked
1/4 c. crispy sunflower/pumpkin seed mix
1/2 c. melted coconut oil
2 t. cinnamon
1/2 t. salt
1 1/2 c. pumpkin
1/2 to 3/4 c. coconut sugar or raw honey
Mix well, spread on large baking sheet and bake at 300 degrees for 30-40 minutes, stirring half way through. Store in airtight container.
