Summer Berry Salsa

This simple Summer Berry Salsa, made with blueberries, blackberries, and raspberries, is a zesty cool treat for July 4th or any time.

Ingredients
  

  • 3 cups mixed berries or cut fruit (blueberries, blackberries, raspberries)
  • 1 yellow bell pepper chopped
  • 1/3 to 1/2 red onion diced
  • 1 jalapeno pepper seeded and diced
  • Juice of 1 lime
  • 1/4 to 1/2 tsp pink Himilayan salt
  • 1 tbsp avocado or olive oil
  • 1 tbsp white balsamic vinegar
  • 1 tbsp raw honey
  • 1/4 cup cilantro chopped
  • 2 roma tomatoes (optional - for more traditional salsa taste)

Instructions
 

  • Mix all ingredients together in a bowl and toss gently.
  • Serve immediately with tortilla chips or spread over baked or barbequed salmon or chicken.
