It is berry season at our farm, so I’m in the berry recipe season. Hopefully that explains why you are getting two berry recipes in a row here. But, who can really complain about too many berry recipes?

And after you’ve made my Quick Berry Syrup and used it in so many ways you are going to want to try another berry recipe!

Summer Berry Salsa Uses

This quick summer berry salsa recipe is just the perfect recipe to serve up for your 4th of July BBQ or any summer gathering. Of course, serving it up with tortilla chips for an appetizer would be the obvious way to use it.

But, another fun option is cinnamon pie crust triangles. Simply substitute mint leaves for cilantro and you are golden.

For a great savory meal, spread it over meat. Baked or barbequed salmon or chicken are excellent choices, but a pork tenderloin would also be lovely topped with Summer Berry Salsa.

Summer Berry Salsa Ingredients

  • 3 cups berries or berries and other chopped fruit
  • 1 whole yellow bell pepper diced small
  • 1 whole jalapeno, seeded and finely diced
  • 1/3 to 1/2 red onion, diced
  • juice of 1 lime
  • 1/4 to 1/2 tsp pink Himalayan salt
  • 1 tbsp white balsamic vinegar
  • 1 tbsp olive or avocado oil
  • 1/4 c. chopped fresh cilantro
  • 1 tbsp raw honey
  • Optional: 2 chopped Roma tomatoes (excellent on savory foods)

I used blackberries, blueberries and Raspberries for my salsa because that is what is in season at our farm right now. If I only had blueberries I would add mango slivers.

If I still had a few strawberries I would mix them with blueberries in this salsa. And peaches and blueberries is a combination not to be beat.

And, if you want a bit more traditional tomato taste, you always have the option of throwing in a couple of diced roma tomatoes.

This recipe is best made up fresh just minutes before serving. I have refrigerated mine in a sealed mason jar for a few hours or a day, but longer than that it really begins to break down.

Summer Berry Salsa Instructions

Just put all the ingredients together in a bowl and toss gently. It is that simple! Serve immediately with chips, or spread over meat.

Ingredients
  

  • 3 cups mixed berries or cut fruit (blueberries, blackberries, raspberries)
  • 1 yellow bell pepper chopped
  • 1/3 to 1/2 red onion diced
  • 1 jalapeno pepper seeded and diced
  • Juice of 1 lime
  • 1/4 to 1/2 tsp pink Himilayan salt
  • 1 tbsp avocado or olive oil
  • 1 tbsp white balsamic vinegar
  • 1 tbsp raw honey
  • 1/4 cup cilantro chopped
  • 2 roma tomatoes (optional – for more traditional salsa taste)

Instructions
 

  • Mix all ingredients together in a bowl and toss gently.
  • Serve immediately with tortilla chips or spread over baked or barbequed salmon or chicken.
